Whole Food GF Banana Bread

For those of you who have asked for the recipe, this makes a wonderful treat if you're eating whole-foods but rememebr it's still a treat;

 

Whole Food GF Banana Bread

 

3 brown/ black bananas mashed

3 eggs

1 tsp vanilla or almond extract (if you like - I don't bother)

1 tablespoon honey

¼ cup butter

2 cups blanched almond flour or half coconut or rice works well too

½ teaspoon celtic sea salt

1 teaspoon GF baking soda

Spices to taste - I usually add cinnamon and/ or ginger or all spice

Cup of Dried fruit if you like

Cup of Nuts - pecans or walnuts work well

 

 

Place bananas, fruit if using, eggs, vanilla, honey and butter in a food processor or bowl and whisk/ blend

Pulse in almond flour, salt and baking soda

Scoop batter into a greased 7.5 x 3.5 loaf tin or fill muffin cases 2/3 full

Bake at 190 degrees C for 30-35 minutes (20 mins for muffins)

Remove from oven and allow to cool.

 

Enjoy with Fresh Coffee or Chai tea...

Serves 12 or 5 hungry yogis!
